cast iron crispy green eggs in 5 mins
you can make this without a cast iron but cast iron gives you crispy eggs.
once you've achieved your perfect sunny side up with runny yolks (who tf makes one egg right lol),
- turn off the heat + spread green goddess over the white parts of the egg
- add chilli oil (you can use laoganma but making your own chilli oil is worth the returns :))
- add pumpkin or sesame seeds to garnish
this was sooooo good on so many levels - freshness of the green goddess, lazy brunch at home for introverts SORTED
*** if you don't have cast iron a good nonstick or stainless steel will do to give you a really crispy sunny side up :) but i recommend cast iron or stainless steel for non-toxic cookware.
