Somtum Inspired Green Mango Salad (Perfect for Summer)

last year i went on a wild trip to koh phangan alone and ate somtum every. damn. day. i didn't specifically visit "recommended" places to have somtum at, but rather, just went along with the universe's flow and ordered the zingy salad everywhere i went.

what i took away was - fish sauce makes anything great. i also used green mango as it's more commonly found in singapore instead of green papaya. 

feeds 10 - 15 pax (party style)
1 whole red red cabbage
2 green mangoes

so if you are not feeding 10-15 pax, just slice enough vegetables accordingly. the sauce can be kept in a jar for up to 3 days, so just make the following batch's worth.

sauce ingredients
green goddess at least 100g
2 tbsp gula melaka 
3 -4 cloves raw garlic
3-4 red chili padi seeds removed
4 tbsp fish sauce 
2 tbsp tamarind water/ paste or u can use tamarind juice to thin the sauce out too. if no tamarind just add more lime
lime juice (a squeeze will do)

directions:
1. in a mortar and pestle, pound garlic and birds eye chilli and gula melaka until dissolved and well combined

2. add the other ingredients and adjust to make it saucey


3. massage the salad - it should not be drowning in sauce but should be coated and massaged well. red cabbage even though it's a hardier type of cabbage should soften if you massage and caress it nicely with this sauce



all other measurements are completely up to you. there is no right or no wrong. the green goddess is idiotproof!!
