Asian Style Quinoa Salad ft. Sexy Green Goddess
I’ve never been a fan of scoring my food, but rather, I’m the type of person who rates food based on how many times I can eat it in a week.
This spicy quinoa salad is made great with a 4 ingredient sauce by simply blooming hot coconut oil over our signature green goddess, thinly sliced lime leaves & red chili. the result is a fragrant sauce that will coat and permeate your quinoa without leaving it too oily.

salad:
1 cup quinoa
1/2 a cucumber, diced
red radish, thinly sliced
you can use whatever vegetables you want but the quinoa is a great base which I highly recommend. quinoa is an ancient grain with a great protein & fibre content.
sauce:
2 tablespoons Sexy Green Goddess (Loaded Gun’s signature Cilantro Avo Cashew Sauce
8 lime leaves, thinly sliced
5 big red chillies, thinly sliced (you can use a mix of chili padi if you like it super hawt)
2 tablespoons coconut oil, heated
- Soak quinoa overnight, this helps remove the bitter taste from the outer husk of the quinoa (don’t skip this step)
- Cook in normal white rice setting. The texture should yield a grain that has bite with a little pop & chew.
- Dice your cucumbers & slice red radish.
- For the sauce, heat up coconut oil until it shimmers & make sure it is smoking hot otherwise your ingredients will not bloom!!!
- Pour the hot oil over the rest of the sauce ingredients
- Use gloves and massage the oil into the salad or just with a spoon
- We used crushed crispy chickpeas & thai basil leaves to top off this luscious salad. You can also top it off with furikake or roasted peanuts, anything crunchy of your choice would work!
